Mixed fried fish in olive oil
Serves: 4 · AOVE: Balcón del Sur

Ingredients

  • Anchovies, squid, prawns, sole or similar
  • Flour
  • Salt
  • Plenty of virgin olive oil

Method

  1. Clean and dry fish thoroughly. Salt lightly.
  2. Dust in flour and shake off excess.
  3. Heat plenty of olive oil in a wide pan.
  4. Fry in small batches. Drain and serve immediately.
