Why Granada olive oil stands apart

Granada is one of Spain's most celebrated olive oil provinces — and one of the least known outside the country. While Jaén gets most of the international attention for sheer volume, Granada's advantage is altitude and concentration. Its olive groves sit between 600 and 1,200 metres above sea level, in the foothills of Sierra Nevada and the Baza mountain range, where cold winters, dry summers and calcareous soils stress the olive tree in exactly the right way.

Stressed trees produce less fruit — but that fruit is denser in flavour compounds and polyphenols than olives grown at lower altitudes with easier growing conditions. Granada's Picual EVOO consistently tests among the highest in oleocanthal and hydroxytyrosol content of any Spanish-producing region.

The Picual variety in Granada

Over 80% of Granada's olive production is Picual — the world's most planted olive variety, and the one that expresses most dramatically in Granada's mountain climate. Granada Picual at early harvest is recognisable by:

  • Intense green colour with golden highlights
  • Aromas of fresh-cut grass, green tomato, artichoke and olive leaf
  • Pronounced bitterness on the palate — a marker of high polyphenol content
  • A sharp, persistent pepper at the back of the throat — oleocanthal, the anti-inflammatory compound
  • Long finish with herbal and slightly fruity notes

This profile is very different from the softer, milder Picual produced in lowland Jaén. Granada altitude = more intensity, more antioxidants, more character.

Early harvest in October: why timing is everything

The defining factor for premium Granada olive oil is harvest timing. We pick in October, when olives are still green or just beginning to turn. At this point the fruit contains its maximum concentration of polyphenols and volatile aromatics — compounds that degrade rapidly as the olive ripens toward December and January.

Early harvest EVOO from Granada yields less oil per kilo of olives (8–12% vs 18–22% at full ripeness), but the resulting oil has polyphenol counts 3–5× higher than standard harvest and a flavour intensity that cannot be replicated by waiting.

From tree to mill in hours. Cold-extracted below 22°C the same day. No storage of olives before pressing — that is how fresh oil goes rancid before it even reaches the bottle.
